We love them right!!?? They give lots for so little...but I'm running out of ideas....we have
courgette chutney
courgette fritters
courgette soup
courgette in pasta/ couscous and rice
courgette muffins
courgette grilled in strips as a side
What is your favourite recipe for this most prolific of veggie garden producers?? _________________ Trying to knit my own soya yogurt, failing miserably. |

that's a pretty extensive list - my fav is just stir fried strips with noodles - lots of ginger and garlic - delish _________________ trust in the forces that made us and will recycle us again |

| I can't get enough of HFW's recipe for courgette sauce with pasta: grate courgettes and garlic and fry until reduced in a pan with a little salt and oil. Once reduced, add creme fraiche and lots of parmesan. Yum! |

flingdizz that sounds good..I can used homemade soya cream cheese and yeast flakes for the same result I think...thats dinner sorted for tomorrow  _________________ Trying to knit my own soya yogurt, failing miserably. |

Salads? I love fresh courgette in salads. Or cut into chips and dunked in those nut, seed and spice mixes you get in north Africa

You lucky things! I've only had ONE courgette this year. I had four plants in a 4' square deep bed which I'd heaped with fairly fresh horse manure ... was this the problem? The plants were weak from the start and two have recently shrivelled up completely. Last year I had loads of courgettes, and miss them! Any ideas for this happening? _________________ Local food - better by far! |
