yes, a missed opportunity there! £1 million project ... wow - they must be hoping to sell a heck of a lot of cheese!!
so not the Crannach bread folk then ... or any mention of Craigmyle.
it'll be great to get a few more cheesemakers in the area tho ... I heard an interesting episode of the 'food programme' a couple of weeks ago where they were investigating problems with some big cheese makers who'd spent a fortune upgrading and modernising their cheese making buildings, and the cheese had changed to something horrible that they couldn't sell. Apparently it was due to subtle differences in temperature, humidity, and the natural bacteria in the atmosphere. so it sounds like it's quite an art to make a good cheese, and to then keep it consistent! _________________ Be the change you want to see in the world |

They are. Definitely big business, and not just local.

It's opposite the Crannach bakery, and they will, no doubt, be doing something with them - if only using their shop/cafe as an outlet! The connection with Craigmyle is that they will be using those premises to start off, while the new place is being built. _________________ Ina |
