My goodness everyone must be starving. Apparently nobody has been in the kitchen since march.
Anyway as suggested in another post I did have a baking day today. With the help of my lovely assistant DD we made a whole kaboodle of tastey treats.
Chocolate and coffee layer, chocolate and coffee Bantemburgh, Mediterranean Loaf, parkin and crunchy fruit cake. All made with the aid of my kenwood.
It's great I can beat up my marg and sugar whilst weighing out my other ingredients. I know, silly pleasure, but after years of using a hand held whisk it was great to be using a Kenwood again.
I even had time to soak and cook some chickpeas, so I made chicken and chickpea casserole in the slowcooker for dinner and I will make hummous with the rest tomorrow.

Monday is usually cooking day here.
I made carrot & corriander soup, pea and ham soup, butternut squash & barley risotto, pancakes stuffed with bacon, leeks, potato and cheese.
I'm hoping I'll be able to get some nice meals stocked up in the freezer for July when the baby's due so I won't have to bother cooking from scratch everyday but will have tasty HM food. |

Got the kenwood out again. This resulted in celery bread, seeded brown bread, coffee and walnut layer.
I also made chewy flapjacks and a cannelli bean, tomato and basil casserole.
Served the casserole with grilled megrim and I'm having a bowl of it with some of the celery bread for my lunch today. _________________

Sunday appears to have turned into baking day for me.
Today I made: chocolate and courgette cakes, Apricot flapjacks, Farmhouse Sultana Loaf, Wild Garlic Ciabatta and smoked sausage & barbeque bean casserole. Which is for dinner tonight. _________________
