the first blackcurrants of the season are finely ready in the garden!
We make heaps of blackcurrant crumble

recipe to make enough for 1 crumble to fit 20cm x 15cm dish (serves 4)
for topping
150g flour
100g butter
75g demera sugar

wash enough blackcurrants to half fill dish
mix them with a bit of sugar (to taste)
rub topping mixture until resembles breadcrumbs
pour over blackcurrants
cook at 180C (ours is fan oven) until light brown on the top, usually about 20min

Its so scrummy. The blackcurrants are so intense (and we like them slightly tart so not much sugar), gorgeous.

Do you leave the little bit on the end where the flower was or laboriously pick them all off?

we only bother to remove the stalks, not the small brown woody bit at the other end. it disintergrates in the cooking

I usually mix blackcurrants with gooseberries or apples for a crumble, you still get the intense blackcurrant flavour without having to use all blackcurrants.

Aren't blackcurrants the very best fruit?  So much goodness and flavour in them that you only need a few at a time.
