Strawberry Curd400g pummet of fresh strawberries
2 dessert spoons cornflower
4 eggs
325g caster sugar
225g butter
Squeeze of lemon juice
whisk eggs and put into sauce pan, whisk strawberries and add, along with the rest of the ingredients, to the eggs, stir with a balloon whisk over a medium heat, untill it thickens....whisk for another min, then pour into sterilized jars....leave to cool...will keep for 2-4 weeks.
to make lemon curd
replace strawberries with juice and finely grated rind of 4 lemons
use 1 dessert spoon of cornflour instead of two....other wise follow as above

never thought of trying non-citrus curd (have made orange etc) - sounds great.
I guess you could use a lot of other fruits?

would imagine so diana....kiwi would be nice....just with other fruits you would need to add the lemon juice to keep the colour

I made some. It was very nice, but it went a bit lumpy. I'm guessing that's because I'm not used to making curd with cornflour

a balloon whisk gets rid of the lumps Diana...glad you like it though

It wasn't big lumps, and I did use a whisk (but not a balloon whisk).
Oh well, I'll just have to keep trying until I get it right

When I made lemon curd, before I put it into jars i passed it through a sieve, this caught the zest and any lumpy bits .. would it be suitable to do for the strawberry curd or are there lumpy strawberries in the curd?
