Mushroom and nut pilaff (for carrot lover)3 tablespoons oil
1 medium onion
1 clove garlic, crushed
2 sticks celery, chopped
1 red pepper, cored, seeded and chopped
1 geen pepper, cored, seeded and chopped
100g cashew nuts, chopped
1 tablespoon soy sauce
225g brown rice, cooked
salt and black pepper
Heat the oil in the wok. Add the onion and fry for about 5 minutes or until transparent. Add the garlic, mushrooms, celery, red and green peppers, nuts and soy sauce and stir fry for 5 to 7 minutes. Add the cooked brown rice, check the seasoning and toss the pilaff together, stirring until heated through.
Serve with green salad.........and carrots of course

It is very good, you will like it.
I think it's best with brown rice as it has that nutty flavour...I forgot to say that didn't I, glad I remembered.
