I don't know an awful lot about hydroponics, we did try to grow some beans in a uni experiment, but it was very complicated to get the right mix of chemicals in the water to suit the plant. We were trying to compare different treatments and looking at root growth, but as far as I can remember it was quite an effort to put the mix together.
If you can buy the minerals, etc needed in a ready made sachet it would be a lot easier, but as far as I understand it, each species needs different requirements. I'm pretty sure for long term growth the water has to aerated.
Probably tomatoes would be the best place to start, I'm sure Jim McColl from the Beechgrove garden used to work in that area.
