elderflower cordial

im hoping to make some tomorrow, does anyone have the quantities etc to use of things, and the method. seems to be alot of elderflowers this yr

This is ours SH that you tasted the other day. We used a recipe passed to us from Fithompson...

20-30 heads of elderflower
6 pints of water
2lbs of sugar
2 lemons (chopped)
1 tsp of citric acid (from chemist)

Bring all ingredients to the boil in a large pan. Cool and cover the mix for a couple of days, then strain through muslin or other material so you have clear cordial.

Left ours for 2 days - which is prob too long - but it turned out ok. Heard you can replace the citric acid with cream of tar-tar?? Ours was a bit lemony for me - think we'll use less next time.

thanks , ill have to get this stuff from the chemist, and some lemons tomorrow now, its too late today.

SH citric acid and lemons are the same thing, lemons contain tons of the stuff which may be why Maria, yours was lemony?

so i presume i need to de juice these lemons, or do i slice them in and take them out with the elderflowers

Maria has put 'chopped' in her recipe so i would guess that they went in whole.... i tend to put the juice in and a little rind...so i guess which ever you prefer

I've made elderflower champagne for several years now and I use only 4-5 large heads of elderflower.  Just this small number give a really strong floral taste.

Yes but they are making cordial which needs to be much stronger as it is diluted for use

ive got 25 heads, 2 lemons, plus a bit of my own ingredience, a few lemon balm leaves, a few sprigs of camonmile,

its ready its dam good too, infact im going to pick enough flowers for another one, im just making 3 ribena bottles up at a time, so it wont take long to get through the flowers are coming to an end, so id better get a move on

Just made mine too, very chuffed with it. I used 20 heads, the lemons and oranges, rind first then added them quartered, plus citric acid, 1.2 litres of water I think and 1.7 of sugar? Lemon balm sounds good!!! Very chuffed, planning to make more later in week.

i put 4 of those nettle t bags you gave me in it too, and 4 other herbal t bags, white pomegranit or something,

I fell of the nettle wagon recently and felt it, so back on again and beginning to notice difference.
