onion, garlic, tomatoes, sweetcorn, tatties, kale, ummm dunno really. Whatever comes to hand. Oh yeah, chicken!

Chicken, sweetcorn and noodle was my girls' favourite when they were wee. Especially if I did prawn crackers too - they loved how they expanded in the pan Cheap and cheerful too

Here's my chook soop recipe..
A big pot
a chicken (whole or carcass will do)
Water
2 x chicken stock cubes
3 leeks chopped
1 small onion chopped small
a small handful of long grain rice
a big head of parsley (curly or flat) finely chopped
ripped up chicken meat thrown back into pot
Salt and pepper
I usually strain the stock once ready (twice usually with a fine sieve to get the bits out)
et voila... my mums christmas chicken soup

Fry chopped leek in a little butter, pour on hot chicken stock, chop up a potato and add, plus salt and pepper, and cook till potato disintegrates. Pick meat off bones and add to soup.
When our Esse stove is on over winter I put chicken carcasses in a casserole dish with lots of water and put in bottom oven overnight. The next day - loads of good tasty stock, and bones have gone soft so can feed to dog.
