Just had left over herby, parsnip and tattie soup. Really do think that cold = soup. Anyone got any good recipe ideas for simple (needs to be with me) soups that i can make. So far i do a good deal of guess work...with a bit of this and a bit of that...would be nice to have a go at tried and tested flavours.

What's your fav...and do fancy sharing your recipe with a novice?

I make loads of soups, but quantities of ingredients vary depending on what I have/what needs used up   . Some good combs though include:

Curried parsnip
Butternut squash, ginger and lime
Carrot and ginger
"All the root veggies you have" and lentil (all blitzed up and a hunk of fresh bread for dunkin')
Leek and chickpea (with a little cheese on top - yes, that really does work)

Will add more as I think of them (or create them)

chicken and sweetcorn is one of my favourites
make it thatoftern i am not sure of quantities
but would be roughly
a litre of chicken stock(home made stock cubes dont work with this one)
a can of creamed sweetcorn
tablespoon of sherry
tablespoon of sugar
half a teaspoon of salt
bring to the boil for 5 mins
then beat
1 egg
teaspoon of sesame oil together
drizzle in to the soup while whisking fast
serve with some finely sliced spring onion on top (optional)

Best soup ever was my mums where it was basically tattie soup (with heaps of veg and tatties) but with those wee mini mac sausages chucked into it as well... that made the best soup.

That or the soup/stew that grampa made (was too runny to be stew, but too think to really be called soup )

roasted sweet potato and red onion soup - delicious. Throw in some cumin seeds when you roast the sweet potatoes and add to veg/chicken stock.

Roasted cauliflower makes a fine soup too - full of flavour.
