I had to improvise with our tea tonight, as i'd not been to the shops, and had to bin the majority of our food because the fridge/freezer packed in...
Luckily our hens have started laying again, so a few eggs and a lump of parmesan cheese and a pot of basil growing in the greenhouse...
Parmesan & Basil Omlette
4 tiny pekin bantam eggs
1 small egg courtesy of chicken little
1 large egg from Daisy
2 handfuls of grated parmesan
1 tablespoon of basil leaves ripped up
salt and pepper
a splash of milk
I have to say if was very yummy indeed and my son even comented on how lovely it tasted... miracles never cease |
